Carrot, Cabbage and Spinach Muffins

Method

  • Preheat the oven to gas mark 5,190C.
  • Grease the deep muffin pan or use muffin cases. Mix all the dry ingredients in a bowl. Now add all the wet ingredients and finally all the vegetables. Mix this really well. Spoon this into the baking pan dividing it into 12. Bake it for 25 mins till the muffins are nicely browned. Serve them hot or cold.
  • Tips

    • Ideal for kids lunches. Try adding meats like mince,fish or chicken. Swapping with any vegetables like courgettes,pumpkin.. Replacing herbs of your choice is a good idea too!! It is perfect for picnics too.

    • 200mls semi skimmed milk
      25 gms Butter/ margarine.
      100gms spinach
      250gms plain flour
      1tsp soda bicarbonate
      1tbsp baking powder
      2medium carrots grated coarsely
      good pinch of dried chillies
      good pinch of black pepper
      50 gam parmesan finely grated
      75 gms seeds mix
      1 egg lightly beaten.
