Christmas Vegetarian Nut Roast

Method

  • Requires: Large Loaf Tin
  • Cooks at: 180C/350F less for fan assisted ovens.
  • for 20 to 30 minutes
  • Serves: At least 8 more if used as a side dish


  • Chop the nuts finely in a food processor or chopping gadget. You can choose any combination of nuts you prefer.
  • Melt butter, add onion and carrots and cook for 5 minutes. Add celery, crushed garlic and the nuts and fry for 10 minutes. Stir in the herbs and spices. Then add the puree, the breadcrumbs and the mushrooms, tamari, salt and pepper and stir with some stock (do not soak the mixture) leave for 5 minutes then add more stock if needed. The mixture needs to absorb the liquid.
  • Put into the loaf tin.
  • Sprinkle the sunflower seeds or pumpkin seeds or possibly a combination of both on to the loaf.
  • Cook in a loaf tin for about 20-30 minutes

  • Serve with a homemade tomato sauce with a little bit of curry powder added to it.
  • I have made this as a vegetarian alternative but it can also be used as a rich stuffing, though I have never actually tried stuffing a bird with it.

  • Tips

    • If you add too much liquid it will not turn out as a loaf and you will have to spoon it out of the tin. However having done that before it is still delicious.

    • 110g Walnuts or Roasted cashews
    • 110g Hazelnuts or Brazil Nuts
    • 50g Butter
    • 1 onion. finely chopped
    • 50g carrots. grated
    • 2 garlic cloves. crushed
    • 2 celery stick. finely chopped
    • 1dsp tomato puree
    • 1tsp. cayenne pepper
    • 1tsp Marjoram
    • 1tsp cumin - ground
    • 1tsp Parsley. Chopped
    • ½ tsp Coriander Ground
    • 110g Breadcrumbs
    • 110g mushrooms. finely chopped
    • 2Tbsp Tamari (Light Soy Sauce)
    • 500ml vegetable stock
    •  salt and black pepper
    • 2Tbsp Sunflower seeds or Pumpkin seeds
