Indian Savoury Curry Gravy

Method

  • 1. Heat the oil and fry the onion and garlic until they are soft and golden.
  • 2. Mix the spices into 1/4 pint water and add to the onion. Cook for a further 5-10 minutes.
  • 3. Reduce heat to simmer. Add tomato puree and ketchup and more water, then simmer for half an hour or so. Keep adding a little water to stop it getting too dry.

  • 4. Add pre-cooked meat or chicken or frozen seafood and salt, and further chilli if you want it hotter. Add water as necessary, and keep simmering until ready to serve.
  • Tips

    • Careful when you have added the cooked meat - don't over heat so the meat falls apart but make sure it is thoroughly reheated. With prawns, again don't overcook otherwise they will be tough
      You can make a large batch of this and freeze. Don't let it get too dry but don't add too much water, it needs to be thick and rich.

    • 2 tsp turmeric
    • 2 tsp cummin. ground
    • 1 tsp chilli powder
    • 1 tsp coriander. ground
    • 1 tsp garam masala
    • 4 tsp paprika
    • 2 tsp dry fenugreek leaves
