Especial Skinny Chilli Con Carne (8 WeightWatchers ProPoints)

Method

  • 1. Dry fry the mince in a non-stick pan on max heat until browned, strain away the fat into an old container and throw the fat away when cooled solid (whatever you do don't tip it down the drain!) Set aside.

  • 2. Fry the onions on a low heat until starting to colour, then add garlic, once blended add spices and cook for another minute.

  • 3. Add sauce and reduce for an hour, add water if it gets thick, depends on how you like it.

  • 4. Serve with plain boiled brown rice, a tablespoon of guacamole and chopped coriander and it's only 8 WeightWatchers ProPoints a serving.
  • Tips

    • 1. If you forget and tip the beef fat down the sink it will cool solid and block the sink then follow it with a kettle-full of boiling water.

      *Best oil to use is fry-lite olive oil - it's water and oil emulsified but failing this a teaspoon-full of olive oil will do.

      For the veggie/vegan version use soya protein mince, vegan stock cube and use 1 tsp cocoa powder and 1/2 tsp sugar instead of chocolate. Leave out the soured cream in any guacamole recipe.

    Ingredients

    • CHILLI
    • 1 small pack lean mince
    • 2 onions sliced
    • 3 cloves garlic. peeled & finely chopped
    •  oil to fry*
    • SPICES
    • 1 beef oxo cube
    •  salt & pepper to taste
    • 1 tsp cumin seeds. crushed
    • ½ tsp chilli powder/ ½ a fresh chilli
    • SAUCE
    • 1 tin chopped tomatoes
    • ½ tube tomato puree
    • handful chopped coriander
    • 2 pieces dark chocolate (70% or higher)
    • ½ lime. juiced

    I've been helping my mum make chilli since I was tiny, I was allowed to do the garlic and open the tins etc. I've adapted it for my own tastes.
