Method

  • Set oven at 180 degrees C

  • Cream sugar and margarine, then add eggs one at a time whilst beating. Stir in rice flour, flour and baking powder.

  • Put mixture into moulds (I use cupcake cases in UK or muffin trays) and bake for 30 mins. About 10 minutes before end of cooking, dust with sugar.
  • Ingredients

    • 125g sugar + extra for dusting
    • 70g margarine
    • 3 eggs
    • 150g rice flour
    • 50g Flour
    • 1 dsp baking powder
