Salmon Fishcakes

Method

  • Boil potatoes until tender and then mash.
  • Cook salmon fillets.
  • Preheat oven to 200c.
  • Flake fish.
  • Add potatoes, lemon juice,mayonnaise and chopped herbs.
  • Season well.
  • Mix together.
  • Grease baking trays.
  • Roll mixture into balls and flatten before placing onto baking tray.
  • Drizzle or brush with olive oil.
  • Bake in oven for about 25mins or until going golden.
  • Delish with veg or salad.
  • Ingredients

    • 900gr Potatoes
    • 900gr Salmon Fillets skinned
    • 1 tbsp lemon juice
    • 3 level tbsp mayonnaise
    • 1 level tbsp Chopped Herbs (Mint. Basil. Coriander. Parsley. etc.)
    •  oil for brushing
