Method

  • 1. Pre-heat the oven to 180°C / 350°F / Gas Mark 4

  • 2. Crumble the flour, butter, ground ginger and bicarbonate of soda in a mixing bowl, then add sugar, syrup and egg and mix until it forms a firm pastry mix.

  • 3. Using the rolling pin, roll out the pastry to about 5mm thick. Make sure the surface and the rolling pin are well dusted with flour. Cut out the shapes with a pastry cutter.

  • 4. Place the cut out pastry on a greased or non-stick baking tray.

  • 5. Bake them about 10- 15 minutes.

  • 6. Decorate as you like it with icing and sweets.

    • 12 oz Plain flour
    • 6 oz Light soft brown sugar
    • 4 oz Butter
    • 1 Medium egg
    • 4 tbsp. Golden syrup
    • 1 tsp. Bicarbonate of soda
    • 0.5 tsp. Ground ginger
