Prawn, Mango and Spinach Salad

Ingredients
- 115g young spinach leaves
- 200g cooked & peeled tiger prawns
- 1 large mango. peeled & thinly sliced
- 1 shallot or spring onion. sliced very thinly
- DRESSING
- 2cm piece fresh ginger. peeled & finely chopped
- 1 tbsp dry sherry
- ½ orange. zestd & juiced
- 3 tbsp sunflower oil
- 1 tsp toasted sesame oil
