Prawn, Mango and Spinach Salad

Method

  • 1. Make the dressing by whisking the giner, sherry, orange zest and juice and oils in a bowl. Season lightly.
  • 2. When ready to serve, lay the spinachy in a bowl and top with the prawns and mango. Pour over the dressing and fold together gently. Sprinkle the shallot or spring onion on top.
  • Tips

    • You just need to serve this with some very yummy fresh bread.

    Ingredients

    • 115g young spinach leaves
    • 200g cooked & peeled tiger prawns
    • 1 large mango. peeled & thinly sliced
    • 1 shallot or spring onion. sliced very thinly
    • DRESSING
    • 2cm piece fresh ginger. peeled & finely chopped
    • 1 tbsp dry sherry
    • ½ orange. zestd & juiced
    • 3 tbsp sunflower oil
    • 1 tsp toasted sesame oil
