Quick and Easy Pasta with Pesto

Method

  • 1. Heat the oven to 200oC gas 5. Put the tomatoes on a lined baking sheet. Drizzle with 2 tbsp oil and the vinegar. Season and roast for about 20 minutes.
  • 2. Meanwhile cook the pasta following instructions on packet. Drain and mix with the pesto and rocket. Serve immediately with the tomatoes scattered over.

    • Tips

    • This doesn't need anything else but some crusty buttered bread never fails to please! It is just sooooooooo yummy! You could use any other pasta.

    • 500g baby plum or cherry tomatoes. halved
    •  extra virgin olive oil
    • 1 tbsp balsamic vinegar
    • 500g spaghetti
    • 6-8 tbsp pesto
    • 2 handfuls rocket
