Quick and Easy Pasta with Pesto

This must rate as one of the easiest and quickest recipes but still packed with flavour!

Method

1. Heat the oven to 200oC gas 5. Put the tomatoes on a lined baking sheet. Drizzle with 2 tbsp oil and the vinegar. Season and roast for about 20 minutes.
2. Meanwhile cook the pasta following instructions on packet. Drain and mix with the pesto and rocket. Serve immediately with the tomatoes scattered over.

Ingredients

Pesto 6-8 Tbsp
Spaghetti 500g
Balsamic Vinegar 1 Tbsp
Extra Virgin Olive Oil
Baby Plum Or Cherry Tomatoes. Halved 500g
Handfuls Rocket 2

Hints 'n' Tips

This doesn't need anything else but some crusty buttered bread never fails to please! It is just sooooooooo yummy! You could use any other pasta.
