Sweet and Spicy Vegetable Curry

Method

  • 1. Heat oil in a large frying pan and add onion with the spices and cook until onion is softened – this takes about 10 minutes.

  • 2. Add mushrooms, peppers and courgettes and cook for a further 2 minutes.

  • 3. Stir in Heinz Tomato Ketchup and vegetable stock and simmer uncovered for 15 minutes.

  • 4. Season with black pepper and serve.

    • 2 tbsp. Vegetable oil
    • 1 large Onion. roughly chopped
    • 1 tbsp. Curry powder
    • 1 tsp. Ground coriander
    • 1 tsp. Ground turmeric
    • 130g Button mushrooms. roughly chopped
    • 1 Red pepper. deseeded and finely chopped
    • 2 Courgettes. roughly chopped
    • 0.5 bottle Heinz Tomato Ketchup
    • 400 ml Vegetable stock
    •  Freshly ground black pepper
