Frozen Berry Panettone

Method

  • 1. Try slicing a 500g chocolate chip panettone into 6 layers: the central base into 4 and the ‘muffin’ top into 2.

  • 2. Place 1 x 400g pack basics frozen berry mix in a bowl, slicing any large strawberries or blackberries, and add 1 tablespoon white caster sugar.

  • 3. Whisk 300ml whipping cream until it forms stiff peaks and lightly fold through the berries.
  • Discard one of the panettone layers (use it for toast in the morning!) and divide the berry mixture between the layers.

  • 4. Melt 120g dark chocolate in a small heavybased
  • pan or in the microwave and pour over the panettone. Place in the freezer for 4–6 hours and remove 10 minutes before serving.

  • 5. Slice and serve garnished with more frozen berries for a luscious alternative dessert over the festive period.
