Cook the chicken pieces for 30 minutes in the oven.
While these are cooking gently fry the onions and garlic until soft, then add celery, leeks, and carrots. Gently fry for a couple of minutes. Then add soup (or chicken stock) and beans. Add about 1 1/2 pints of boiling water, season to taste. Allow to simmer for about 30 minutes and then cool. Put this lot in a food processor and wiz until smooth, return to the pot. Cut up the cooked chicken portions into small bits and add to the pot along with the two tins of sweencorn.
Allow the soup to heat through and serve with crusy homemade bread.
You could use any veg you want really this is a great way to fill the kids with veg and fibre, 'cos its wizzed up they have no idea!!
