Roast Pork with Spiced Plums and Cajun-spiced Wedges

Method

  • 1. Preheat oven to 200 C, 180 C fan, 400 F, gas 6.
  • 2. Place the pork in a roasting tin or ovenproof dish, season generously with salt and pepper and roast for 30 minutes.
  • 3. Mix together the potatoes, cajun seasoning and a couple of table spoons of oil. Place on a baking tray and add to the oven approximately 15 mins after adding the pork.
  • 4. Lightly crush the cardamom pods and mix with the plums.
  • 5. Add the cinnamon, star anise, red wine vinegar and caster sugar and mix well.
  • 6. Remove the pork from the oven and pour off the excess fat.
  • 7. Spread the plums spices and any juices around the pork.
  • 8. Return to oven and roast for a further 30 minutes.
  • 9. Slice the pork and serve with plums and cajun wedges.

    • ROAST PORK WITH SPICED PLUMS
    • 1 lb 12 oz boneless pork loin joint
    •  salt and freshly ground back pepper
    • 3 cardamom pods
    • 4-5 plums quatered and stoned
    • 1 cinnamon stick
    • 3 star anise
    • 2 tbsp red wine vinegar
    • 2 tsp caster sugar
    • CAJUN POTATO WEDGES
    • 2 lb potatoes. cut into wedges
    • 1-2 tbsp Cajun seasoning
