- ROAST PORK WITH SPICED PLUMS
- 1 lb 12 oz boneless pork loin joint
- salt and freshly ground back pepper
- 3 cardamom pods
- 4-5 plums quatered and stoned
- 1 cinnamon stick
- 3 star anise
- 2 tbsp red wine vinegar
- 2 tsp caster sugar
- CAJUN POTATO WEDGES
- 2 lb potatoes. cut into wedges
- 1-2 tbsp Cajun seasoning
