Gnocchi with Homemade Spicy Tomato Sauce

Method

  • 1. Cook gnocchi according to directions.
  • 2. To remove tomato skins: score with knife around circumference. Add to boiling water for 10 – 20 s. Transfer to cold water. The skins should now peel off easily.
  • 3. Heat oil in pan and fry off onion, garlic and chilli. Add the tomatoes and red wine. Cover and simmer for 30 mins until thickened.
  • 4. Season and stir in about half the basil leaves.
  • 5. Add as much sauce as you like to the cooked gnocchi (any left-over can be frozen for future use) and stir through.
  • 6. Serve topped with Pecorino Romano and the remaining basil leaves, as well as a side of garlic bread.
  • Tips

    • Add diced, fried chicken pieces to the gnocchi if you feel the need for some protein.

      Parmesan Reggiano can be used if you can't get Pecorino.

      Add more chillis or crushed red peppers if you like a hot arrabiatta sauce.

      A teaspoon of smoked paprika fried with the onion, garlic and chilli adds a tasty twist to the sauce.

    Ingredients

    • 1 pack of gnocchi
    • 5 large on-the-vine tomatoes. remove skins and chop
    •  Large handful of basil leaves. torn into strips
    • 1 onion. finely chopped
    • 1 medium chilli. finely chopped
    • 4 garlic cloves. finely chopped
    • 1 small glass of red wine
    •  Salt & Pepper to season
    •  Pecorino Romano. freshly grated
    •  Serve with oven-baked garlic bread
