Fish Thai Red Curry

Method

  • 1. heat the coconut milk and curry paste in a pan. Then add the fish for 2-3 mins until cooked.
  • 2. Add fish sauce, brown sugar, stock cube, half a cup of water and the frozen veg.
  • 3. Simmer and heat through for 5-6 mins.
  • 4. Serve over rice and top with fresh corriander.
  • Tips

    • Use chicken instead of fish if you prefer.

      Also tastes great with egg noodles instead of rice.

    Ingredients

    • 1.5 lbs White fish(tilapia.catfish.haddock or anything you like)
    • 1 Tin of Coconut milk
    • 1 tbsp red thai curry paste
    • 3-4 tbsp fish sauce (nam pla)
    • 3-4 tbsp brown sugar
    • 1 chicken stock cube
    • 1 bag of frozen mixed asian veg
    •  fresh corriander leaves to serve
    •  serve with rice
