Quick Veggie/Vegan Fajitas (Red Pepper Free!)

Method

  • Combine marinade ingredients and marinade the quorn pieces in it - place in the fridge to soak up the flavour while prepping the rest of the ingredients.

  • Fry onions and garlic, you can cook on a little higher than normal but keep an eye on it, if it burns a little, not a big deal! :) Once golden, add corgette and mushrooms and cook until they give up their juices. We don't want these juices so cook on a mid/high heat until all evaporated. Add marinated quorn. Cook until hot through.

  • To serve, cook tortillas in a wide-based non-stick pan for a minute or less each side, serve these on a warmed plate with the filling in a separate bowl.

  • Serve with side salad, guacamole (see my other recipe), soured cream and salsa. A great dessert is anything with chocolate in it with a pinch of chilli powder added :)
  • Tips

    • The marinading can be done that morning or even the night before but keep in a sealed container in the fridge or you'll get a manky-smelling fridge :s

      If cooking vegan check ingredients on tortilla wraps and you can buy vegan cheese-substitute. Even my guacamole can be done vegan, see tips! To make vegan soured cream get 1/2 small tub Alpro Soya cream and add a couple of drops of vinegar, stir. Works with regular cream too :)

      The word fajitas is pronounced 'Fa-hee-tass', don't ever, ever pronounce the 'j'!!! Tortillas is pronounced 'torr-tea-ass', don't pronounce the 'l'.

      You can use chicken pieces instead of quorn but there'll be more calories and more mess. I don't normally eat quorn but for a veggie (or even vegan, but be careful with the tortillas and cheese) guest this makes a brilliant meal.

      It's wonderful if you're watching your figure as they're intricate to eat so you feel fuller before you've eaten as much as you might normally do. Same goes for sushi!

    • MARINADE
    • 1 tsp ground cumin
    • ½ tsp salt
    •  freshly ground black pepper
    • 1 lime juiced. with a little zest
    • ½ (or to taste) chopped chilli
    • FAJITAS
    • small pack quorn pieces
    • 4 tortilla wraps
    • 1 onion. sliced
    • glug olive oil
    • 2 cloves chopped garlic
    • 1 corgette. finely sliced
    • 5 button mushrooms. sliced
