Method

  • 1. Blend cream cheese and wine in blender.

  • 2. Clean mushrooms with paper towel and halve them.

  • 3. Melt butter in pan. Add shallots and cooks until tender.
  • Add mushrooms, anchovy paste and cayenne pepper. Cook mushrooms until limp.

  • 4. Add mushroom mix to the blender. Add parsley and at first pulse.

  • 5. Blend until smooth.

  • 6. Spoon into serving dish and refrigerate until firm (approx. 45 minutes)

  • 7. In oven or toaster heat thick bread or baguette until crisp and serve with pate.

  • Ingredients

    • 225g Cream cheese
    • 1 tbsp. Madeira wine
    • 4 tbsp. Butter
    • 175g Shallots (or substitute red onion w/ ¼ tsp. sugar)
    • 18 oz Button mushrooms
    • 1 tbsp. Anchovy paste
    • 0.25 tsp. Cayenne pepper
    • 100g Parsley
    • 4-5 slices French bread
