Method
1. Blend cream cheese and wine in blender.
2. Clean mushrooms with paper towel and halve them.
3. Melt butter in pan. Add shallots and cooks until tender.
Add mushrooms, anchovy paste and cayenne pepper. Cook mushrooms until limp.
4. Add mushroom mix to the blender. Add parsley and at first pulse.
5. Blend until smooth.
6. Spoon into serving dish and refrigerate until firm (approx. 45 minutes)
7. In oven or toaster heat thick bread or baguette until crisp and serve with pate.
Ingredients
- 225g Cream cheese
- 1 tbsp. Madeira wine
- 4 tbsp. Butter
- 175g Shallots (or substitute red onion w/ ¼ tsp. sugar)
- 18 oz Button mushrooms
- 1 tbsp. Anchovy paste
- 0.25 tsp. Cayenne pepper
- 100g Parsley
- 4-5 slices French bread
