Shrimp in Red Pepper Sauce

Method

  • 1. Wash & dry shrimp.

  • 2. Slice peppers into thin strips.

  • 3. In hot, deep pan over high heat melt 1 halved butter & 2 Tbsp. olive oil

  • 4. Add ¼ cup onion & the peppers. Fry until onion turns translucent (approx. 6 minutes). Lower to medium heat.

  • 5. Add stock and simmer covered until peppers soften (approx. 10 minutes).

  • 6. Add cream & parmesan cheese. Mix well and simmer for another 3 minutes.

  • 7. Remove from heat and pour into blender. Let cool for 3 - 5 minutes.

  • 8. Puree until creamy. Taste for salt, pepper, parmesan & cream.

  • 9. In same pan over high heat melt remaining butter & olive oil. When soft, add remaining ¼ cup onion. Fry until onion is translucent.

  • 10. Add shrimp, chopped parsley, salt & pepper. Mix well & cook for another 5 minutes. Stir occasionally.

  • 11. Add brandy and let alcohol reduce (approx. 3 minutes). Remove from heat.

  • 12. To serve- design shrimp on plate and dress with pureed red pepper sauce.


  • Suggestion: this superb dish is great over pasta, regardless if its angel hair, penne or rigatoni.
  • Ingredients

    • 2 lb Large peeled shrimp
    • 0.5 cup Parsley (or substitute basil leaves)
    • 0.5 cup Diced white onion
    • 4 tbsp. Olive oil
    • 8 oz  Brandy (or substitute port)
    • 1 lb Red peppers
    • 0.5 stick Butter (separated in two)
    • 0.5 cup Parmesan cheese (or substitute mascarpone)
    • 1 cup Chicken or vegetable stock
    • 0.5 cup Heavy cream
    •  Salt & pepper
