Method

  • 1. Cut potatoes into bite size portions. Take care not to make them too small as they will crumble when mixed.

  • 2. Pour into roasting pan or Pyrex, preferably a roasting pan with cover.

  • 3. Coat generously with oil, salt & pepper.

  • 4. Mix with your hands (or spoon) and verify that all have been coated well.

  • 5. Add lots of fresh herbs if using and mix again.

  • 6. Place roasting pan with cover into 450 degree oven.

  • 7. Bake for an hour to hour and a half, but mix every 30 - 45 minutes.
  • Tips

    • Suggestions: this recipe works wonderfully as a side dish for any meat and even fish. Yet, for it to succeed, it requires generous amounts of oil and spices. The potatoes should not be frying in a shallow pool of oil but each should be covered with oil of choice, salt (go a little more than the usual amount you use) and pepper. Any fresh herbs are also great additions.
