Combine ingredients in a pan and bring to a simmer with a lid, turn down to lowest poss heat and cook for a few mins.
Ladle out cups full and then use a teaspoon to take out spices and ginger pulp. Alternatively, place in a CLEAN teapot and pour into cups with a tea strainer to catch bits.
Tips
Use ground spices like ginger, clove and cinnamon.
Drop in the vanilla beans and empty pod, alternatively you can put the scraped pods into sugar for cheap vanilla sugar.
Just made this for the 1st time, borrowed hints from other users' recipes and added quantities by eye and taste. Worked out well so am adding while I remember the quantities.
