Easy Christmas Chestnut Stuffing

Method

  • 1. Melt the butter in a large frying pan and cook the onion, bacon and chopped turkey liver for 10 minutes or so until the onion is transparent and everything tinged gold at the edges.
  • 2. Tip the contents of the pan into a large mixing bowl and add all the remaining ingredients. Season and mix very thoroughly.
  • 3. Either shape into balls the size of golf balls or a bit smaller or place all the mixture into a shallow oven proof dish. Cook for about 30-40 minutes until cooked and golden.
  • Tips

    • I don't stuff the turkey as I'm always concerned the bird will not cook thoroughly. I put an onion and a quartered lemon into the cavity to maintain a moist but fragrant inside to the bird. Plus I like the stuffing baked and crispy on the outside and nice and succulent underneath.

    • 450g fresh. cooked & peeled or vac packed chestnuts
    • 1 lge onion. finely chopped
    • 110g smoked streaky bacon. finely chopped
    •  the liver from the turkey. chopped finely
    • 25g butter
    •  225g good quality pork sausagemeat
    • 4 tbsp chopped parsley
    • 1 dessertspoon chopped thyme
    • ΒΌ tsp ground mace
    •  seasoning

    Got to have a good stuffing with your turkey! I've always made at least one stuffing and it has to be chestnut.
