Meat and Potato Pie

Method

  • Coat the meat in the seasoned flour, place in frying pan with the onions and gently brown.

  • Once browned, add in the carrot, seasoning and stock, bring to the boil, then simmer for at least an hour (I prefer around 2 hours for softer meat).

  • After your preferred cooking time add potatoes, place in a pie tin and let cool,

  • Once cooled, add the pastry lid, brush with egg yolk and cook in an oven on 200c for around 40 mins until the pastry is golden.
  • Tips

    • For a traditional Lancashire lunch, make up individual pies, in foil pie cases, first put a thin layer of pastry in the case, add filling and then add a thin lid of pastry, sealing the sides with egg yolk and pinching together.

    • I cooked this Meat and Potato Pie for dinner last night. I did the lamb version (not the beef as beef is very expensive and quite difficult to get a good cut here in Cyprus). I used Astrochef's short crust pastry from here on Mydish and the pie really turned out better than I had expected. The pastry was perfect and the lamb lovely and tender. I am going to have to make this for a few of my Cypriot friends - thanks.

    Ingredients

    • 500g Stewing Lamb ie. soft shin
    • 1 Onion peeled and sliced
    • 1 large carrot
    • 350ml Beef stock - home made if possible or a good quality shop bought beef stock
    • 500g potatos peeled and chopped then parboiled
    •  Seasoned flour
    •  cooking oil
    •  short crust pastry
    • 1 egg yolk

    As a kid growing up in Preston, I used to eat pies all the time, but having moved down to Bournemouth, you can't find a good pie, so now I make them.
