Method

  • Pan fry chicken or prawns initially and set to one side.

  • Chop peppers, onions and open the tomatoes ready for use.

  • Heat oil and ad chopped unions, Stir and cook for about 4 mins and then add chopped pepper. Cook for a further 3 mins.

  • Add rice, cook for two mins stirring all the time. Add tomatoes and beans/peas, water, soy sauce and salt. Crumble in the stock cube.

  • Mix all together.

  • Simmer for 15-20 minutes gently.

  • Check if cooked and if dry add a little more water.

    • 250g chicken or prawns
    • 1 red pepper
    • 1 onion
    • 400g Tin Tomatoes
    • 2 tbs olive oil
    • 250g long grain white rice
    • 100g peas or green beans
    • 275ml hot water
    • 1tbs soy sauce
    • pinch salt
    • 1 Vegetable Stock Cube
