Method
Pan fry chicken or prawns initially and set to one side.
Chop peppers, onions and open the tomatoes ready for use.
Heat oil and ad chopped unions, Stir and cook for about 4 mins and then add chopped pepper. Cook for a further 3 mins.
Add rice, cook for two mins stirring all the time. Add tomatoes and beans/peas, water, soy sauce and salt. Crumble in the stock cube.
Mix all together.
Simmer for 15-20 minutes gently.
Check if cooked and if dry add a little more water.

- 250g chicken or prawns
- 1 red pepper
- 1 onion
- 400g Tin Tomatoes
- 2 tbs olive oil
- 250g long grain white rice
- 100g peas or green beans
- 275ml hot water
- 1tbs soy sauce
- pinch salt
- 1 Vegetable Stock Cube
