Method

  • Cut the potatoes and carrots ready to boil. Boil the carrots and potatoes for 5 minutes then add the peas and continue boiling for another 4 minutes.
  • Drain well.
  • Add the frankfurters and gherkins and chop everything into pea size chunks.
  • Stir in the parsley and mayo and season with salt and pepper.
  • Cool in a fridge and serve with lovely warm bread.

    • 3 large waxy potatoes
    • 3 frankfurter
    • cup peas
    •  parsley
    • 3 tbsp mayonnaise
    • 6 gherkins (small)
