Gluten Free Mini Chocolate Chip Muffins

Method

  • Sift together flour and cocoa.
  • In a seperate bowl cream together butter and sugar. Add the eggs a little at a time.
  • Mix in the flour and cocoa. If using, add chocolate chips (I like white and milk chocolate mix just to add a bit of variety)

  • Line mini muffin trays with cases, and 2/3 fill each case.
  • Bake for 12 - 15 minutes or till knife comes out clean.
  • Allow to cool for a few minutes, then remove muffins & cool on a wrack.
  • Wipe out muffin tray before making the next batch.
  • Enjoy!
  • Ingredients

    • 125 Gluten Free Self Raising Flour (could use regular self raising as well)
    • 2 tbsp cocoa powder
    • 125g soft butter / margerine
    • 125g sugar
    • 2 eggs lightly beaten
