Gluten Free Mini Chocolate Chip Muffins
Method
Sift together flour and cocoa.
In a seperate bowl cream together butter and sugar. Add the eggs a little at a time.
Mix in the flour and cocoa. If using, add chocolate chips (I like white and milk chocolate mix just to add a bit of variety)
Line mini muffin trays with cases, and 2/3 fill each case.
Bake for 12 - 15 minutes or till knife comes out clean.
Allow to cool for a few minutes, then remove muffins & cool on a wrack.
Wipe out muffin tray before making the next batch.
Enjoy!
Ingredients
- 125 Gluten Free Self Raising Flour (could use regular self raising as well)
- 2 tbsp cocoa powder
- 125g soft butter / margerine
- 125g sugar
- 2 eggs lightly beaten
