1. Soak the porcini mushrooms in boiling water for 5 minutes
2. Using as little oil as possible, fry the onions until they are soft. If you are using minimal oil, this takes longer and needs to be done on a low light with the lid on the pan.
3. Add the prepared mushrooms and the porcini mushrooms, reserving the soaking liquid
4. Cook for 15 minutes, stirring as needed to stop the mushrooms and onions catching
5. Add the porcini liquid and half the stock, cover and cook for 20 - 30 minutes until the mixture is soft
6. Liquidise adding the additional stock until it is the right consistency for your family.
