Method

  • 1. Soak the porcini mushrooms in boiling water for 5 minutes
  • 2. Using as little oil as possible, fry the onions until they are soft. If you are using minimal oil, this takes longer and needs to be done on a low light with the lid on the pan.
  • 3. Add the prepared mushrooms and the porcini mushrooms, reserving the soaking liquid
  • 4. Cook for 15 minutes, stirring as needed to stop the mushrooms and onions catching
  • 5. Add the porcini liquid and half the stock, cover and cook for 20 - 30 minutes until the mixture is soft
  • 6. Liquidise adding the additional stock until it is the right consistency for your family.
  • Ingredients

    • 10g dried porcini mushrooms
    • 2 large Onions. Peeled and Sliced
    • 1 kg chestnut mushrooms. sliced
    • 2 litres vegetable stock
    •  Low fat oil spray for frying
