Dads Beef Curry

Method

  • Peel and coarsely chop the onions and the garlic.
  • Using half the fat, stir in a tbls of curry powder and fry at low heat for one minute.
  • Add onion and garlic and fry further 2 minutes.
  • Pour in stock and lemon juice, add bay leaves and simmer for 45 mins.
  • Meanwhile trim fat from meat and cut into bite size pieces.
  • Season with salt and pepper and dust with remaining curry powder.
  • Melt rest of fat in separate pan and seal meat on high heat.
  • Strain stock over the meat, stir in sugar and tomato puree and simmer until meat tender.
  • Set aside to cool and skim off any fat.
  • Reheat and serve on a rice ring with popadoms and naan bread and chutneys.


  • Tips

    • Can use this recipe for all meat curries by changing stock.
      Can also use additional veg or all veg.
      Try coconut milk.

    • 1 onion
    • 2 cloves garlic
    • 3oz Butter
    • 1.5 tbl sp Curry powder
    • 2 pints beef stock
    • Juice ½ lemon
    • 2 Bay Leaves
    • 1 tbl sp brown sugar
    • 2 tbl sp tomato puree
    • 1.5 lb Chuck steak
