Method

  • Cook the rice in boiling salted water for 40 - 45 mins until tender.

  • Rinse, drain and add the remaining ingredients.

  • Toss thoroughly before serving with 6 tblsp Soy Sauce Dressing.

  • Soy Sauce Dressing.
  • Put all the ingredients n a screw topped jar, adding salt and pepper to taste. Shake well to blend before serving. Makes 1.25 cups.

  • Ingredients

    • 1 and ½ cups Brown Rice
    • 3 Spring Onions finely chopped
    • 1 Red Papper cored seeded and chopped
    • ½ Cup Raisins
    • 60 g - 2oz Cashew nuts roasted and chopped
    • 2 Tablespoons choped parsley (opt)
    • Soy Sauce Dressing 
    • quarter cup Olive Oil
    • 3 tblsp Soy Sauce
    • 2 tblspn Lemon juice
    • 1 clove Garlic crushed
    • cm - ½ inche piece root ginger finely chopped
    • salt and pepper
