Brown Rice Salad
Ingredients
- 1 and ½ cups Brown Rice
- 3 Spring Onions finely chopped
- 1 Red Papper cored seeded and chopped
- ½ Cup Raisins
- 60 g - 2oz Cashew nuts roasted and chopped
- 2 Tablespoons choped parsley (opt)
- Soy Sauce Dressing
- quarter cup Olive Oil
- 3 tblsp Soy Sauce
- 2 tblspn Lemon juice
- 1 clove Garlic crushed
- cm - ½ inche piece root ginger finely chopped
- salt and pepper
Method
- Cook the rice in boiling salted water for 40 - 45 mins until tender.
Rinse, drain and add the remaining ingredients.
Toss thoroughly before serving with 6 tblsp Soy Sauce Dressing.
Soy Sauce Dressing.
Put all the ingredients n a screw topped jar, adding salt and pepper to taste. Shake well to blend before serving. Makes 1.25 cups.
