Place couscous in a bowl and pour enough boiling water over to cover with approx 1/2cm on top.
Finely chop the chilli and garlic. Chop all vegetables and place in non-stick roasting tin,and sprinkle with the chilli, garlic and shredded fresh herbs or dried herbs, add a generous sprinkling of salt & pepper. Drizzle with olive oil. Roast in 180 degrees oven for approx. 20 minutes.
Stir couscous with a fork and then add to the roasted vegetables.
You can add a sprinkling of grated cheese if you wish, or a little soy sauce or Worcestershire sauce.
Tips
This is a very healthy, low fat side dish or main dish - and very filling if you are on a diet! This recipe has helped me to lose weight healthily in recent years and can be made using any selection of vegetables you have in the fridge.
