Roasted Vegetables with Couscous

Method

  • Place couscous in a bowl and pour enough boiling water over to cover with approx 1/2cm on top.

  • Finely chop the chilli and garlic. Chop all vegetables and place in non-stick roasting tin,and sprinkle with the chilli, garlic and shredded fresh herbs or dried herbs, add a generous sprinkling of salt & pepper. Drizzle with olive oil. Roast in 180 degrees oven for approx. 20 minutes.

  • Stir couscous with a fork and then add to the roasted vegetables.

  • You can add a sprinkling of grated cheese if you wish, or a little soy sauce or Worcestershire sauce.
  • Tips

    • This is a very healthy, low fat side dish or main dish - and very filling if you are on a diet!
      This recipe has helped me to lose weight healthily in recent years and can be made using any selection of vegetables you have in the fridge.

    • COUSCOUS & ROASTED VEGETABLES
    • 125gr couscous
    • 2 courgettes
    • 2 medium red onions
    • 6 large mushrooms
    • 1 red pepper
    • 2 sticks celery
    • 1 head of brocoli
    • 1 green pepper
    • 1 tbspn olive oil
    • small bunch dill. basil. coriander - fresh or dried
    • 1 clove garlic
    • 1 Red Chilli. deseeded and finely sliced
    •  salt and freshly ground black pepper
