Sesame Grilled Chicken On Celeriac Mash

Method

  • 1. Cut the chicken into two or three pieces each. Coat very lightly with flour, dip in beaten egg then dip in the sesame seeds. Make sure they are well coated.
  • 2. Place the coated fillets in the grill pan under a hot grill and cook for about 5 minutes on each side until thoroughly cooked. The cut flesh should not show any pink at all.
  • 3. To make the celeriac mash, peel and slice the celeriac. Cook in a steamer or in water until tender. Then drain and place in a blender and puree or mash with a potato masher and mix with the other ingredients.
  • Tips

    • Serve this with any vegetables, but green beans or broccoli go well. The mash comes out quite soft and creamy. If you prefer a firmer teture or are particularly hungry, mash a large cooked potato with the celeriac.

    • 2 small chicken breast fillets. skinned
    • 1 tbsp potato flour (or plain flour)
    • 1 small egg. beaten
    • 5-6 tbsp sesame seeds

    • CELERIAC MASH
    • 400g celeriac
    • 2 tbsp low fat fromage frais
    •  a little salt
    •  freshly ground black pepper
