Method

  • 1. Place all dry ingredients in a bowl and mix together. Stir in the buttermilk to form a wet dough.
  • 2. Divide evenly between two 2lb loaf tins which have been dusted with wheat germ. Make a cross on the top of each one and sprinkle with sesame seeds and wheat germ.
  • 3.Place in a preheated oven 230 C(210 for fan oven)for 10 minutes. Reduce to 140 C (120 for fan oven) and bake for 1 hour.
  • 4. Cool for 10 minutes in tins and then cool completely on a wire rack.

    • MAKES 2 LOAVES
    • 450g wholemeal flour
    • 65g wheat germ
    • 65g Plain white flour
    • 65g wheat bran
    • 225g pinhead oatmeal
    • 2 tsp soft brown sugar
    • 2½ tsp bread soda or bicarbonate of soda
    • 1 litre buttermilk
    • TOPPING
    • 2 tsp wheat germ
    • 2 tsp s Sesame Seeds
