This is one for the special occasion and when the diet can go hang!
Break up the chocolate and melt it in the milk over a moderate heat. DO NOT LET IT BOIL.
Whisk up the buttter and sugar until light and fluffy. Beat in the egg yolk and then add the chocolate milk. The heat will cook the egg, so don't worry.
Into a nice dish place about half the macaroons/ratafias. Dampen them slightly with a light sprinkling of cognac. Pour over HALF the chocolate mix. Repeat this section once more. Leave to set in the 'fridge overnight.
