Method

  • Prehaet oven to 180 c and prepare square cake tin. Silicon works well without greasing.
  • 1.Combine oil, sugar, and lightly beaten egg in a large bowl and stir to mix.
  • 2. add carrots, dates, coconut and orange rind. Stir to mix.
  • 3. sift flour, bicarb and cinnamon into bowl and stir gently to mix.
  • 4. Pour mix into prepared baking tin, mixture will be quite sloppy.If using silicon container you will need to place on a baking tray.
  • 5. Place in oven and bake for about 40 mins.
  • Ingredients

    • CAKE
    • 175g light muscavado sugar
    • 3 large eggs. lightly beaten
    • 150ml Corn Oil
    • 1 orange rind (grated)
    • 80g stoned dates.chopped
    • 20g desiccated coconut
    • 180g self raising flour
    • 1 tsp bicarbonate of soda
    • 1tsp cinnamon powder
    • 140g grated carrots
