New Years' Tiramisu

Ingredients

  • 48 sponge fingers
  • 1 large mug strong black coffee
  • 2 tbsp brown sugar
  • 3 tbsp rum or brandy
  • 500 g tub mascarpone cheese
  • 2 eggs
  • 4 tbsp icing sugar
  • 1 tbsp cocoa powder

Method

Mix the coffee, brown sugar and a tablespoon of rum or brandy in a bowl. Dip the sponge fingers in the coffee mixture. Place them in layers in an 8" rectangular pan. Whip the egg yolks and icing sugar together. Add the mascarpone cheese and the remaining rum or brandy and mix together well. Whip the egg whites until stiff, and then fold them into the mascarpone mixture. Spread the mascarpone mixture over top of the sponge fingers evenly. Dust through a sieve with the cocoa powder. Refrigerate for at least 3 hours before serving.
