Date & Walnut Tea Bread

Method

  • Preheat the oven to 180 degrees C (or equivalent).

  • Place dates, water and bicarbonate of soda into a bowl and leave for 5-6 mins. Combine all the other ingredients, except the walnuts, in a food processor (or make by hand by creaming the spread and sugar together well, stirring in the egg along with the flour etc). Add the date mixture and the walnuts by hand. This prevents them getting too finely chopped up in the processor.

  • Turn into a 1 lb loaf tin and bake at 180 degrees C for 15 mins. Reduce the heat to 160 and continue until done. A skewer should come out clean when tested.

  • When cool spead with butter and enjoy. Freezes well.

    • 6 oz Dates. chopped
    • 7 fl oz Boiling water
    • 1 teasp bicarbonate of soda
    • 6 oz light brown sugar
    • 2 oz Any soft cooking spread
    • 1 sm/med Egg
    • 8 oz plain flour
    • 1 teasp baking powder
    • 2 oz Walnuts. chopped
