Mincemeat Cake (Light Fruit Cake)

Method

  • Preheat the oven to 180 degrees C.

  • Place the first four ingredients in a food processor and mix to smooth consistency, or you can make by hand by creaming the spread and sugar together and then adding the eggs and flour.

  • Mix in the sultanas and mincemeat by hand. Turn into an 8" tin,level the top and sprinkle with the almonds. Bake at 180degrees C (or equivalent) for 15 mins. Then reduce the heat to 160 and continue cooking until done. A skewer should come out clean. If the cake looks as if is browning too much cover lightly with foil.

  • It makes a nice light fruit cake, keeps and freezes well.

    • I made this last night to use the leftover mincemeat fronm Christmas. Very quick and easy,but took slightly longer to bake than stated.

    • 8 oz SR flour (sieved)
    • 5 oz soft brown sugar
    • 5 oz Cooking spread/soft margarine
    • 2 medium Eggs
    • 3 oz Golden Sultanas
    • 1 x 1lb jar Mincemeat ( Good Quality)
    • 1 oz Flaked almonds
