1. Preheat oven to 180oC gas 4. Take tow sheeets of kitch foil large enough to enclose the fish pieces loosley. Spray them with Fry Light then place the fish in the centre of each sheet.
2. Add half the tomato, cucumber, onions, chilli, coriander and lime to the top of each fish piece and season well.
3. Wrap the parcels up, making a tight seal but leaving blenty of air inside.
4. Place them on a baking tray and bake for 15-20 minutes or until the fish is cooked through.
Tips
You can serve this with couscous or rice or even mashed potato (but use greek yoghurt and low fat spread in the mash. Also stir fried vegetables such as courgettes and mangetout or steamed asparagus.
This is one of my favourite Healthy recipies. It is really fresh and packed with good flavours. You could serve this to guests without any guilt about serving up diet food!!
