Broccoli & Stilton Soup

Method

  • 1. Roughly chop onion and crush garlic.Separate broccoli into florets.
  • 2. Heat butter in frying pan and fry gently until soft, add garlic and cook for1 minute.
  • 3. Transfer onion and garlic into large saucepan,add broccoli florets,bayleaf and vegatable stock.Bring to boil,then simmer for 15 mins.
  • 4. Remove from heat and crumble in stilton. Discard bayleaf.
  • 5. Whizz in blender until smooth.
  • 6. Transfer back to saucepan,check seasoning, add chilli
  • flakes if using.
  • 7. Reheat and add cream just before serving.
  • 8. Great as a starter or serve with fresh crusty bread.
  • ENJOY !!
  • Tips

    • Add chilli flakes to your taste if using.

    • Well I have just made this and I used 370ml of Veg stock with 3 Veg Oxo cubes.
      I added 100g Stilton rather than 75g which gave it a much richer taste. I must say it's yummy and even lovelier when the cream went in. Served it with crusty bread. YUM YUM!! Thank you

    Ingredients

    • 25g butter
    • 1 onion
    • 1 garlic clove
    • 500g broccoli
    • 2 tbs cream
    • 1 bayleaf
    • 75g stilton cheese
    •  salt and pepper
    •  Crushed Chili flakes (optional)
    • 2 Vegetable Stock Cubes desolved in 1 litre boiling water
