Mushroom Soup

Method

  • Melt butter in a large saucepan, add mushrooms and cook for 3 minutes.

  • Add the flour and stir well to coat mushrooms.

  • Add the vegetable stock and milk, stir, bring to boil slowly.

  • Reduce heat, cover pan and simmer for 5 minutes.

  • Puree in a blender or use hand blender.

  • Season to taste.
  • Tips

    • Delicious with crusty bread.

    • PS. I've found this to be even tastier if you use chicken stock cubes instead of vegetable.

    • 300ml Vegetable stock
    • 600ml / 1 pint Milk
