Lactose Free Coconut Couscous Pudding
Method
1. Place couscous and coconut in bowl.
2. Pour over 1 1/2 cups boiling water, stir well.
3. Cover and stand five minutes.
4. In a pot place cornflour, spices,milk and syrup.
5. Whisk to combine and cook over moderate heat.
6. Stir constantly till mixture thickens.
7. Add couscous, mix well.
8. Spoon into serving dishes, cool 30 minutes till set.
9. Serve with yoghurt.
Ingredients
- 1 cup Couscous
- 1 cup Coconut
- 1 tbsp. Cornflour
- 1 cup Soymilk
- 1 cup Coconut milk
- 0.25 cup Golden syrup
- 0.5 tsp. Mixed spice
- 1 pot Yoghurt
