- 3 tbsp. Sunflower oil
- 8 Potatoes. unpeeled. cubed
- 4 Carrots. sliced ½-inch thick
- 1 cup Onion. chopped
- 4 Garlic cloves. minced
- 2 tsp. Flour
- 2 cups Chicken broth
- 1 cup Dry red wine
- 1 tsp. Dried thyme leaves
- 1 tsp. Pepper
- 200g Mushrooms. sliced
- 0.5 cup Fresh parsley. chopped
