Seasonal Asparagus and Duck Egg

Method

  • First, take the asparagus spears and snap off the woody ends, then cut each piece of parma ham into three and wrap around the asparagus spears, put on a baking tray and give a drizzle of olive oil and a pinch of pepper, place them under a grill for 5 mins and turn once whilst cooking.

  • Whilst you are cooking the asparagus you can poach the eggs, add some white wine vinager to a pan of boiling water, create a whirlpool and crack the egg into the middle, leave to cook for 3-4 mins until the white has set,

  • Toast the brioche, then place 3 asparagus spears on top, then the poached egg and finish with a small pinch of black pepper
  • Tips

    • Hen eggs would also work just as well, but duck eggs give a better flavour

    Ingredients

    • 12 Asparagus spears
    • 4 slices Parma ham
    • 4 duck eggs
    • 4 slices brioche
    • splash white wine vinegar
    • drizzle good quality olive oil
    • pinch Cracked Black Pepper
