Chili Soup
Ingredients
- 1 and ½ lbs minced beef
- 2 onions
- 2 cans kidney beans
- 2 cans plum toms
- 1 potato
- 2 teaspoon chili powder
- 1 tablespoon tomato puree
- 4 cups cup
- good dash beef stock (bottled from supermarket!)
- 1 cup tomato juice
- good pinch to taste sea salt (maldon if possible)
Method
- In a large pot over medium heat, combine the mince beef and onions. Saute for 5 minutes, or until meat is browned. Drain excess fat and add the potatoes, beans, tomatoes, chili powder, water, juice and salt to taste. Bring just to a boil and reduce heat to low. Simmer for 1 hour and serve with grated cheese and sour cream if liked. Freeze any left over.
