  • Yummy, hot and spicy great for those cold winter nights!

  • Ingredients

    • 1 and ½ lbs minced beef
    • 2 onions
    • 2 cans kidney beans
    • 2 cans  plum toms
    • 1 potato
    • 2  teaspoon chili powder
    • 1 tablespoon  tomato puree
    • 4 cups cup
    • good dash beef stock (bottled from supermarket!)
    • 1 cup tomato juice
    • good pinch to taste sea salt (maldon if possible)

    Method

    • In a large pot over medium heat, combine the mince beef and onions. Saute for 5 minutes, or until meat is browned. Drain excess fat and add the potatoes, beans, tomatoes, chili powder, water, juice and salt to taste. Bring just to a boil and reduce heat to low. Simmer for 1 hour and serve with grated cheese and sour cream if liked. Freeze any left over.
