Easy Carrot & Coriander Soup

Method

  • Peel and slice the carrots.
  • Peel and dice the onions.
  • Wash and chop the celery.
  • Peel and dice the potato.
  • Chop the coriander.
  • Heat a large pan. Add the olive oil and gently fry the onions and celery until softened slightly. Then add the sliced carrots.
  • Allow to cook a little then sprinkle the flour over the pan contents and stir to soak up the olive oil(use more flour if required).
  • Add approx 4 pints of boiling water to this and stir.
  • Add the diced potato,stir.
  • Add the stock cube, salt and pepper.
  • Check the flavour and if necessary add more salt(don't let it cook out 'bland').
  • Add 1/2 the coriander and allow to simmer until the vegetables are going soft.
  • Remove from the heat and use a hand blender to liquify the contents.
  • Add the remaining coriander and return to the heat for approx 5 more minutes.
  • Ready to serve
  • If required, more water can be added before blitzing if too much has evaporated whilst simmering.

    • 1kg Carrots peeled and sliced
    • 2 Onions. chopped
    • 1 Knorr Vegetable Stock Cube
    • 20ml Olive oil
    • 20g Plain flour
    • 1 Med Size Potato
    • 2 Celery Sticks. chopped
    • 1 Med Size Bunch fresh Coriander
    •  salt and pepper

    Very easy and basic soup but still very tasty.
