Italian Potatoes

Method

  • 1. Bring a large pan of water to the boil, add the potatoes and part boil for 10 minutes.
  • 2. Drain and leave to cool, then cut into slices about 1/4 inch thick.
  • 3. In a large frying pan heat oil over a medium heat, add garlic and cook gently (without colouring) until soft.
  • 4. Add potatoes and rosemary and cook gently for 40-45 minutes, turning occasionally until golden & crispy
  • 5. Season with salt and pepper and serve.
  • Ingredients

    • 1 kg new / baby potatoes
    • 2 Cloves garlic. crushed
    • 2 sprigs fresh rosemary
    • 2 tbspns olive oil to saute
    •  salt and pepper
