Szechwan Duck with Green Beans

- This doesn't need anything more than some simply cooked rice.
Ingredients
- 4 Duck Breasts
- 2 tbsp light soy sauce
- 1 tbsp sherry
- 1 tsp cornflour
- pinch sugar
- 2 tsp vegetable oil
- 2 shallots. peeled & finely chopped
- 2 garlic cloves. peeled & crushed
- 5cm piece of fresh root ginger. peeled & finely chopped
- 2-4 fresh red chillies. seeded & sliced
- 2 tbsp spicy brown bean paste
- 350g fresh green beans
