Szechwan Duck with Green Beans

Method

  • 1. Thinly slice the duck breasts then place in a dish. Mix together the soy sauce, sherry, cornflour and suger and pour over the duck. Mix well and marinate for about 30-40 minutes.
  • 2. Heat the oil and fry the shallots, garlic, ginger and chilli in a wok and stir fry for 30 seconds before adding the duck slices. Stir fry for 3-5 minutes then remove the duck to a bowl and set aside.
  • 3. Add the spicy brown bean paste and stir for 30 seconds.
  • 4. Top and tail the beans and chop into 1" pieces then add to the wok. Stir to coat the beans with the sauce then add a little water. Cover and cook for about 5 minutes.
  • 5. Return the duck to the wok and continue cooking until most of the moisture has been absorbed and the duck and beans are cooked. Serve hot with rice. Adjust the seasoning.
  • Tips

    • This doesn't need anything more than some simply cooked rice.

    • 4 Duck Breasts
    • 2 tbsp light soy sauce
    • 1 tbsp sherry
    • 1 tsp cornflour
    •  pinch sugar
    • 2 tsp vegetable oil
    • 2 shallots. peeled & finely chopped
    • 2 garlic cloves. peeled & crushed
    • 5cm piece of fresh root ginger. peeled & finely chopped
    • 2-4 fresh red chillies. seeded & sliced
    • 2 tbsp spicy brown bean paste
    • 350g fresh green beans
