Salmon Tagliatelle

Method

  • 1. Cook the pasta according to the packet instructions. Drain well and return to the saucepan.
  • 2. Meanwhile...place the salmon in a frying pan (with lid) pour over stock (hot) and poached for around 5 mins. Remove salmon and stock from pan and set aside.
  • 3. Add butter and melt in pan, add shallotts and cook for around 2-3 mins.
  • 4. Pour in stock and cream to pan, simmer for a few minutes. Add peas and black pepper (I like alot), Cook for 2-3 mins.
  • 5. Add the cream and pea mixure to the cooked pasta along with the chopped parsley and mint and stir. Add the salmon and stir gently.
  • 6. Serve and eat...yummy.
  • Tips

    • A nice glass of chilled white wine goes amazingly well and can be consumed whilst cooking!

    • 350g tagliatelle pasta
    • 400g skinless salmon fillets
    • 200ml vegetable stock (hot)
    • 25g butter
    • 3 shallots finely chopped
    • 140ml double cream
    • 200g frozen peas
    • handful flat leaf parsley. chopped
    • handful mint. chopped
