1. Mix together all the cake ingredients, but not the topping ingredients, in a bowl (all in one method).
2. Pour into a prepared, lined 7inch round cake tin and bake at 180 Celsius for 35-40 miutes until a skewer comes out clean and the cake is slightly coming away from the sides of the tin.
3. Whilst the cake is baking, mix together the sugar and lemon juice.
4. Pour the lemon juice/sugar topping over the cake whilst it is still hot and in the tin. Allow to cool completely before removing from the tin.
