Crunchy Lemon Drizzle Cake

Method

  • 1. Mix together all the cake ingredients, but not the topping ingredients, in a bowl (all in one method).

  • 2. Pour into a prepared, lined 7inch round cake tin and bake at 180 Celsius for 35-40 miutes until a skewer comes out clean and the cake is slightly coming away from the sides of the tin.

  • 3. Whilst the cake is baking, mix together the sugar and lemon juice.

  • 4. Pour the lemon juice/sugar topping over the cake whilst it is still hot and in the tin. Allow to cool completely before removing from the tin.

    • 2 Eggs (large)
    • 4 tbsp Milk
    • 1 Lemon Zest. grated
    • DRIZZLE TOPPING
    • 1 Lemon Juice
    • 4oz Caster Sugar
